Performing Gonzui looks like the user hauling in an enormous lungful of air, during which the souls of everyone nearby are dragged toward and into the open mouth to be devoured.
The intake covers a wide radius, gathering every soul inside it in a single breath and swelling the user's Reiryoku while leaving the drained victims dead on the spot. Spiritually aware people seem to shrug it off: the likes of Orihime Inoue, Yasutora Sado, and Tatsuki Arisawa all withstood it where ordinary bystanders could not. Even so, that lone exposure was enough to flood Tatsuki with dread, drain her strength, and knock her unconscious soon after.
Yammy Llargo puts the technique to work in Karakura Town, gulping down a swarm of human souls only to gripe that they tasted awful, a verdict Ulquiorra Cifer pins on how weak they were.
